There was a birthday in our house recently. And in my family, you always make a homemade birthday cake. None of this bakery-bought fancy cake stuff. I stumbled upon this Guinness Chocolate Cake a few months ago. I’m not a Guinness drinker, but I had some on hand for another recipe, so why not try it? Well, it’s the most moist, rich chocolate cake recipe I’ve found.

- Bake to Perfection: Pour the batter into a prepared cake pan and bake until a toothpick inserted in the center comes out clean. The cake should be moist but set.
- Cream Cheese Frosting: Beat room-temperature cream cheese with powdered sugar and a touch of heavy cream.
Tips For Success
- It’s easy to make as a layer cake or a larger single layer, you can divide it between two 8-inch pans. Just check it for doneness early. I’ve found that the single layer does take closer to the 1-hour mark to cook. And the 2 layers took me closer to 40 minutes.
- Let the cake sit overnight before serving. The flavors develop even more, creating an even richer and more indulgent dessert.
- You can easily change up the frosting for a buttercream, either chocolate or vanilla.

Chocolate Guinness Cake
Ingredients
Cake
- 1 cup Guinness
- 10 tablespoons unsalted butter plus additional for buttering the pans
- ¾ cup unsweetened cocoa
- 2 cups superfine sugar
- ⅔ cup sour cream
- 2 large eggs
- 1 tablespoon vanilla extract
- 2 cups all-purpose flour
- 2½ teaspoons baking soda
Frosting
- 8 ounces cream cheese
- 1¼ cups confectioners’ sugar
- ⅛ cup heavy cream
Instructions
- Preheat the oven to 350ºF, butter, and line a 9-inch springform pan. It can also be made this as a layer cake with 2 buttered 8-inch pans and lining the bottom with parchment.
- Combine Guinness and butter in a pan and heat on medium-low heat, until the butter is melted. Remove from the heat.
- Whisk the cocoa and sugar together in a small bowl and add to the pan with the Guinness and butter mixture. Combine.
- Mix the sour cream with the eggs and vanilla and combine thoroughly. Add to the Guinness, butter, cocoa, and sugar mixture.
- Combine the flour and baking soda. Add to the Guinness mixture and whisk until smooth.
- Pour the cake batter into the greased and lined tin and bake for 45 minutes to an hour. If you are making it a layer cake, reduce the cooking time slightly and check for doneness at about 35 minutes. Leave to cool completely on a cooling rack. Since it is quite a moist cake, cool in the pan.
- Once the cake has cooled, prepare the frosting. Lightly whip the cream cheese until smooth, add the confectioners’ sugar, and then beat to combine.
- Add the heavy cream and beat until you have a spreadable consistency. If the frosting is too thin, add a little additional confectioners' sugar to thicken a bit.
