Step-By-Step Guide To Making An Easy Peach Pie

  • Step 1: Combine the peeled and sliced peaches with sugar and tapioca in a large bowl.
  • Step 2: Place the bottom crust of the pie in a 9-inch pie pan. Fill the pie with the peach filling.
  • Step 3: Place the top pie crust over the peach mixture. Trim and press the edges together and pinch the crust to create a fluted edge. Brush the top crust with an egg wash; this helps achieve a golden brown color. Be sure to cut four slits in the top to vent the steam that will be created during baking.
  • Step 4: Bake in a preheated oven at 375° F for 50-60 minutes. 

Tips For Success:

Tip 1: A soggy bottom is the most likely failure of any fruit pie. And juicy peaches can be both a blessing and a curse. Some bakers use bread crumbs on the bottom pie crust to soak up the excess liquid. Others dust the bottom crust with flour. I have started using what is called “crust dust.” It is simply a 1:1 mixture of flour and granulated sugar. Sprinkle a couple of teaspoons over the bottom crust before adding the filling, and you can say goodbye to soggy bottoms. 

Tip 2: If your peaches are really juicy, adding more tapioca might help. Don’t go crazy; a 1/2 teaspoon additional might be all you need.

Tip 3: Unlike a cake, baking a pie a bit longer is not a problem. The only thing to watch out for is overbrowning the crust. But if you want a thicker filling, allowing it to bake longer will promote more evaporation. If the crust starts to brown too quickly, cover the crust with aluminum foil.

Tip 4: I think this pie has a purely peach flavor, but if you want, you can add a little ground cinnamon or even a dash of vanilla extract to the fruit filling. You could also squeeze a little lemon juice into the filling, but be careful; you don’t want to add too much additional liquid.
