Ingredients
- 12 oz. fresh whole milk ricotta
- 1-2 tablespoons extra virgin olive oil
- 1 tablespoon heavy cream
- 1 lemon zested
- 1 tablespoon honey
- 1-2 teaspoons fresh thyme
- Kosher salt
- Black pepper
- Red pepper flakes optional
- 1 baguette
- 1 clove of garlic
Instructions
- Preheat oven to 350°
- Add the ricotta, cream, lemon zest, honey, and thyme to the bowl of a food processor.
- Blend until the ingredients become creamy.
- Add the olive oil to reach your desired consistency and season to taste with salt and pepper. Blend until smooth.
- Transfer to a serving bowl, drizzle with honey, and top with fresh thyme leaves. Add a sprinkle of red pepper flakes if you are using them.
- Slice baguette or other crusty bread. Brush both sides with olive oil, rub with halved garlic clove, and season with salt and pepper. Toast in the oven until the top is golden brown, turn and repeat on the other side.
