Quick and Easy Fruit Cobbler – 3 Ways Apple, Berry, Peach

This easy fruit cobbler recipe has just eight simple ingredients and is so versatile you can make it with just about any kind of fruit you like. It is the perfect recipe to make when you only have a little time but want something that will please a crowd. The prep time is less than 15 minutes. So, if you need a last-minute dessert, this is perfect. It also allows you to use whatever fresh fruits you see at the farmer’s market, from sweet peaches to fresh berries or apples.  It’s a classic dessert and will be a family favorite. This Quick and Easy Fruit Cobbler is a great recipe, easy enough for even non-bakers. 

The basics ingredients of this recipe include:
  • Self-Rising Flour – this is simply flour that already has the baking powder and salt added. It’s great to have on-hand when making quick recipes. In this recipe, I add additional baking powder to give a little more lightness, but you could leave this out and still have a great cobbler. If you don’t have self-rising flour, you can easily make it with all-purpose flour by adding more baking powder and salt to the dry ingredients.
  • Whole Milk – This recipe only calls for 1 cup milk.
  • Sugar – this calls for two cups of sugar, but it really doesn’t come across as overly sweet. But it will satisfy those with a sweet tooth.
  • Butter – the unsalted butter in the recipe is not combined into the cobbler; instead, it is baked around the cobbler to give it the perfect golden brown crust. You will use 1 stick of butter. 
  • Fresh Fruit – here is where you can get creative. Fresh peaches, other stone fruits, fresh berries (blueberries, strawberries, blackberries, or use all three and make a triple berry cobbler), and apples all work great. You could even do a combination of fruit, such as peaches and blueberries. If pressed for time, you could use frozen berries or peaches, but fresh in-season fruit will always be best. Step-By-Step Guide To Making Fruit Cobbler

Not only does this perfect dessert have a simple ingredient list, but it also only takes 4 easy steps to complete:

  1. Step 1 – Prep your fruit (peel your peaches or apples, and slice). This is actually the most time-consuming step. Once complete, add the prepped fruit and one cup of sugar and water to a saucepan and cook for 10 minutes. You will have heavy syrup and cooked fruit. 
  2. Step 2 – Melt butter in your baking dish in the oven.
  3. Step 3 –  Prepare the batter in a separate bowl. It’s so easy; combine flour, sugar, baking powder, and milk in a bowl.
  4. Step 4 – Pour batter mixture into your baking dish with the melted butter, and spoon the peach mixture or other fruit and sauce over the top (DO NOT STIR any of these items together, let the baking process do the work). Bake for 40-45 minutes.

Tips: Adding a little lemon juice or zest will enhance the flavors. When making an apple cobbler, consider sprinkling a bit of cinnamon or nutmeg on top before baking. Also, line a baking sheet with aluminum foil and place it under the cobbler while baking; it can easily bubble over.



Now you’re ready to serve. You don’t need to let this cool for long; it’s best served warm but can be served at room temperature. Which means it’s perfect for a last-minute dessert. You only need a scoop of ice cream (preferably a scoop of vanilla ice cream, but you could even get creative here) or a spoonful of whipped cream.

There are a million fruit cobbler recipes, but this is my go-to recipe since it is so easy and versatile. About 15 years ago, I first time made this and chose it because I was looking for an easy peach cobbler. I have made this so many times over the years, adding all my favorite fruits. Ingredients
  

  • 1-1/2 cups self-rising flour
  • 1/4 teaspoon baking powder
  • 1 stick of unsalted butter
  • 1/2 cup of water
  • 2 cups of sugar divided
  • 1 cup whole milk
  • 1 teaspoon lemon zest
  • 3-4 cups of prepared fruit peaches, apples, berries or a combination

Instructions
 

  • Preheat oven to 350°
  • Combine peeled and sliced fruit with 1 cup of sugar, and water in a saucepan and mix well. Bring to a boil and allow to simmer for 10 minutes.
  • In a 3-quart baking dish place 1 stick of butter. Place the baking dish in the oven to melt the butter.
  • In a medium bowl, combine 1 cup of sugar, self-rising flour, and additional baking powder. Add the lemon zest. Pour milk into dry ingredients and stir to combine.
  • Pour mixture over the melted butter in the baking dish. Do Not Stir to combine.
  • Gently spoon the fruit and the syrup over the batter. Again Do Not Stir to combine.
  • Bake in the oven for 40-45 minutes.
  • Allow to cool slightly and serve warm. Top with whipped cream or vanilla ice cream.
